BBQ confidence is when you build a fire, set it to burn low, then add a rack of ribs and then... Sit and watch them cook? No Way! I got it down. (Meaning the bbq temp) So off in the boat to do a few hours of fishing. When I came back the Q was still around 200, the fire was just about out, and the ribs were falling off the bone. Super soft. Add some Everett and Jones sauce and it's good to go.
Oh look a full moon just came up. Time to rig up that pistol grip frog rod!
